Deep-fried chicken thighs is one of my husband’s favorite meals. The other day, when I had a high fever (PCR negative for corona) and when I fell asleep and cooked my son’s meal, my husband used up the remaining three chicken thighs.
Try to supplement the energy from lipids, and season the shimeji mushrooms with low-salt soy sauce and butter. It was a little too much, so it was also a breakfast for three people the next morning and a lunch box for my husband.

- 3 chicken thighs (about 270g)
- 1 bag of shimeji mushrooms (approx. 100g)
- Fried chicken powder 100g
- Mayonnaise 2
- 100g of water
- Appropriate amount of salad oil
- Large butter 1 (15g)
- Small soy sauce 1 (3g)

- Cut chicken thighs.
- Mix fried chicken flour and water and add chopped chicken thighs.
- Fry in salad oil.
- On the other hand, shimeji mushrooms are boiled after removing stones, then fried in butter and seasoned with soy sauce.
- Add more fried chicken and shimeji mushrooms to complete.

Regarding fried chicken powder, since I used it this time, the fried chicken powder was commercially available and did not require eggs. Therefore, no eggs are used in this cooking.
Regarding the weight of fried chicken thigh and the oil absorbed by the batter, I calculated it for 750 g of chicken thigh and 100 g of batter and used it in the ingredient list. Regarding the amount of oil absorption, please refer to the following references as it is the same material as the source of the nutritional composition table in this article.
